A Night on the aura: Observations from Expo
Some have been here all day, others are on the nose arriving; the difference is evident in their eyes. Those just arriving through the Carside To-Go door, turn in clean black shirts and blue jeans, display expressions of uncertainness about the nighttime that lies ahead. In a coincidental reply to this uncertainty, the faces of the people still on the clock from day-side or those running(a) a double strip visibly reflect the misadventure of the day- a reliable indicator of the night to follow. As the slickness change progresses the first wave of chaos erupts as the freshly arrived congregate in the To-Go area to ensure boththing is in cabaret for a smooth substitution. Moments later, after every apron is securely tied, every magnetic name tag in place, and every morsel of (gossip) passed on from the day to night crew, the night falling out begins.
The kitchen fills with noise as coworkers causally exchange greetings, silently fetching note of who is working in order to predict how the night will go. The manager, still here from the day shift calls to those inwardly earshot, Shift meeting in 3 minutes- tell a neighbor, tell a friend.
With that, the expo line- the virtual epicenter of the store, the inlet between the front of house and back of house- bustles with life. I, I am the expo, the gatekeeper, the peacekeeper and the advocate. Immersed in the chaos of the servers, cooks, and managers; yet set apart, privy to none. The shift meeting begins, uniting the various positions as one team. anxiety enthusiastically rattles off critical informational changes, past sales records, goals for evening, and reason with an encouraging, Lets make this a great shift! and an empowering unified Go TEAM APPLE! shout. The servers all perk up out of the kitchen door to check their section assignment on the floor chart; sighs of relief or grumblings of dissatisfaction ensue.
